Our coffees

Start with the Sélection

It's the coffee we are proudest of, and the one we brew as filter coffee at our bar. The Tradition, stronger, is for those who like their coffee bold. Both come from the same farms. How to brew them →

Our signature coffee

Sélection

The beans are sorted a second time by hand, then roasted for less time than the Tradition. In the cup: a round coffee, low in bitterness, that keeps the body of robusta. Good at any time of day, black or with milk, and with any brewing method.

For: espresso · filter · French press · moka · capsules

The bold one

Tradition

Roasted for longer, the Tradition has more body and an honest bitterness. It's for people who drink their coffee strong, from a moka pot or a cloth filter, and it holds its own in milk, even condensed milk.

The roastery

Roasted in Lomé, every week

Our roaster, a 15 kg machine, sits behind a glass wall at the back of the shop. Every week, Wafiiq and the team roast small batches there: what goes on our shelves, to our business customers and into our capsules.

Every week

We roast as we sell: the coffee doesn't sit in a warehouse for months.

Two profiles

The Tradition stays in the drum longer than the Sélection. That's what you taste in the cup.

Every batch logged

Times, temperatures, weight loss: every roast is logged, so the coffee tastes the same from one week to the next.

Trained in Lomé

The team learned the craft here, with a professional roaster who came from Bordeaux.

From farm to cup

We know where every bag comes from

The farmers

In Badou, Zogbégan and Adossou. We buy their whole harvest and record, for each lot, the farmer and the price paid.

Sorting

The green coffee is cleaned. For the Sélection, it is sorted a second time, by hand.

A QR code on every bag

Scan it with your phone and the page for your bag opens, in English or French. It shows:

  • the farmer and their village
  • the green coffee lot
  • the roasting and packing dates
  • the best-before date
  • the roast profile and cupping notes
  • the trees planted by Midoké

Freshness you can check: your bag's roast date is on its page.

The Midoké tree nursery

For every kilo of coffee sold, the nursery gives a seedling to a partner farmer: coffee trees to renew old plots, shade trees to protect the coffee and the soil. Every planting is followed up, and only living trees are counted.

Our farmers

Midoké: “we are rooted”

Ké means root, in Ewe

Midoké started from a simple idea: process Togolese coffee in Togo, and make the work of the people who grow it known. The brand belongs to Cocolomex, which has been buying and exporting Togolese coffee and cocoa since 2015.

The same supply chain, processed here

The coffee Cocolomex used to export green is now also roasted, packed and served in Lomé, by a Togolese team.

Numbers, lot by lot

Price paid to the farmer compared with the market price, trees planted, roasts: everything is recorded, for every lot.
